Ingredients:
- 2 oz Rye Whiskey
- 1 Sugar Cube
- 3 dashes Peychaud’s Bitters
- Absinthe or Absinthe Substitute
- Lemon peel for garnish
- Ice cubes
Instructions:
- Chill an old-fashioned glass by placing it in the freezer or filling it with ice water.
- In a separate glass, muddle a sugar cube with a few drops of water.
- Add ice cubes to the muddled sugar cube.
- Pour 2 oz of rye whiskey over the sugar and ice.
- Add 3 dashes of Peychaud’s bitters.
- Stir the mixture well for about 20-30 seconds.
- Discard the ice from the chilled old-fashioned glass and add a small amount of absinthe to coat the glass. Swirl it around to coat the interior, then discard the excess.
- Strain the whiskey mixture into the prepared glass.
- Express the oil from a lemon peel over the drink by twisting it over the glass, then drop the peel into the cocktail.
